Menu Monday

I'm going to move fast, so try to keep up.

Monday - Grilled Lemon Garlic Marinated Pork Shish Kabobs with Onion, Pineapple and Sweet Peppers

Tuesday - Spaghetti with Homemade Sauce (recipe below)

Wednesday - Chicken Parmesan with leftover spaghetti

Thursday - Parmesan crusted Tilapia with rice and veggies

Friday - I'm gunning for Pizza. I've got the WORST craving for a big, gooey, hot slice of pizza.


Homemade Spaghetti Sauce


1 large can crushed tomatoes
1 large can tomato puree
1 can of tomato paste
1 medium onion - diced
1lb medium/hot sausage
Italian Seasoning
2 bay leaves
1/4 cup sugar

In a large pan heat EVOO. Add garlic and onion and cook for about 2 minutes on medium heat.

Add sausage, pepper, a dash of salt and Italian Seasoning and cook through. Drain and set aside.

In crockpot add tomatoes, bay leaves and sugar. Add spices to taste.

Stir in sausage mixture.

Cook on low for 4 - 6 hours, stirring occassionally.

*Note - a trick I learned to stop sauce ring around your crockpot - before adding ingredients spray with non-stick spray. Works like a charm!
